Strawberry Cherry Cobbler


This little lady just had a birthday. It was a wonderful day with wonderful people. I feel so blessed for my loved ones and my birthday was just a demonstration of that. They made me feel truly special in every way. Exhibit A, as you see in the picture below: I came home from work to a room truly "birthdayfied". All of my quoted pictures hung-up throughout my room had been re-quoted so that they all applied to "birthday". These decorations, in my opinion, were far better than the generic kind you find at the store. They exemplify love, creativity and time-well-spent. I could not stop smiling.



  
We then followed suit with a casual, but absolutely satisfying lunch at a sports bar right by my house. My sister and I both ordered apple mojitos on the especially hot day, mine accompanied by a turkey club wrap; hers accompanied by a turkey club minus the wrap and the addition of bread. Yes, her's was actually a club.



After my second shift, I came home to vanilla cake with raspberry frosting. I had the pleasure of watching my mother and sister decorate it, which was very funny. It was a one of a kind cake, that made me smile ear to ear. All aspects of the cake were light, so I was able to eat a generous size piece. Finally, we ended the night with the Lego Movie. The perfect ending to a perfect day. Because of work schedules, my birthday dinner was two days later. I chose Thai food, of course. It is my favorite. My noodles with yellow curry made me feel like dancing. It was a truly wonderful birthday celebration and I could not feel more blessed.



Rainy weather calls for cobbler. Cobbler calls for in season fruits; thus, I chose cherries and strawberries. We are a cinnamon loving family, so I included a large amount of soul warming cinnamon within my recipe. To save time, I topped it off with a sheet of puff pastry that I had on hand. Utilization of seasonal fruits, simple comfort in a one pot dessert, cobbler, you are divine. 


Strawberry Cherry Cobbler

5 cups fresh or frozen cherries and strawberries
1/3 cup granulated sugar
Pinch of salt
1 1/2 tbsp ground cinnamon
1 tsp vanilla extract

1 sheet of puff pastry or pie dough

1) Preheat oven to 350. 
2) In a medium sized saucepan, combine cherries, strawberries, salt, sugar and cinnamon. Stir to combine.
3) Heat berry mixture on medium heat, until thickened. Allow to cool to room temperature. Place berry mixture into a 9 or 10 in baking dish. Cover with puff pastry or pie dough. Brush top with egg wash and generously sprinkle with sugar.
4) Bake until crust is golden brown and filling is bubbling, about 40-45 min. 
5) Serve with vanilla ice cream, or as desired.
