Chocolate Matzo Bark
The weather is finally warming-up, at least a little. April showers are trying to bring May flowers. And I am so very ready for it all. But I will admit that I cannot believe how quickly time is going, that it is already April, when it feels as if it were just New Year's and snowing. Though I sometimes become stuck in the monotony and habitual patterns of everyday life, I am trying to remind myself not to work against time, but work with it. Embracing each moment for what it is, right now. Living in the present moment. I sometimes forget this after a long day, but then I come back to reality and remind myself not to look at the big picture too much. Maybe I have not completed the vast majority of my New Year's goals, but that is okay. April will just bring more opportunities, especially with better weather and more daylight time.
One week away from my love's birthday, two weeks until Easter, and many days of wonderful baking and creativity. I have been working on the concept for my love, George's birthday cake for quite some time. Altering the design, configuring the recipes, and I think I have finally put all of the pieces into what I believe will be a truly appreciated gift to him. A gift that he can eat too! I will be working on the cake a little at a time all through next week and I am hoping to share it all with you here.
Now for Easter and Lenten treats, and matzo. We have had a box of matzo in our pantry throughout this season and have snacked on it a little, but I wanted to utilize it for something more. I found a recipe idea in one of the magazines that I regularly read and it struck gold to me. Extremely fast, simple and delicious. Covering all taste sensations, especially sweet and salty, and leaving so much leeway for adaptations for taste preferences and playful creativity. For my Matzo bark, I used a dark chocolate and paired it with whatever I could find in the pantry. It was so much fun searching for ingredients and creating combinations. I was able to produce a large variety of matzo bark for all to try!
Chocolate Matzo Bark
3 sheets of unsalted matzo
6 oz bittersweet chocolate, chopped
Toppings: dried berries, chopped pecans, honey roasted cashew pieces, almond slices, health chips, white chocolate chips, banana chips, roasted coconut, flakes sea salt, etc. etc.
1) Heat oven to 350 F. Place the matzo sheets on to a baking sheet. Bake until golden brown, about 8-10 minutes.
2) Sprinkle the chocolate over the matzo and return to the oven, until the chocolate starts to melt, 30 seconds- 1 minute.
3) Using an offset spatula, carefully spread the chocolate all over the matzo.
4) Immediately sprinkle with preferred toppings while chocolate is still warm.
*I used: roasted coconut chips, banana chips, sea salt, dried berries, honey roasted almond slices and cashew bits, white chocolate chips, and cinnamon chips
5) Let set at room temperature for about 20 minutes before putting into refrigerator for about 5 -10 minutes. Refrigerate until firm. Break into pieces. Serve and store at room temperature.
